
Taiwanese Egg Pancake (Breakfast Egg Wrap)
Taiwanese Egg Pancakes, or “Dan Bing,” are one of Taiwan’s most beloved breakfast dishes. This soft and chewy pancake is made from a light batter and pan-fried with eggs, sometimes filled with cheese, tuna, or ham for extra flavor. Enjoy it plain for a simple morning treat, or customize your favorite savory version — it’s a warm and satisfying way to start the day!
Ingredients
Batter
- 20 g tapioca starch
- 80 g cake flour
- 150 g water
- 1/2 tsp salt
- 1 stalk green onion, chopped
Egg Pancake
- 3 eggs (For frying the pancakes)
- Cheese, bacon, or tuna (Optional fillings for a savory version)
- Soy sauce or ketchup, for dipping (you can also use other sauces you like)
Instructions
Make the Pancake Wrappers
- In a mixing bowl, combine 20g of sweet potato starch, 80g of cake flour, and ½ tsp of salt.

- Pour in 150g water and stir until the batter is smooth.

- Chop 1 stalk of greenonion and add it to the batter. Mix briefly, then set aside.

- Heat a nonstick pan over low heat and add a little oil. Pour a thin layer of batter into the pan, spreading it into a round shape.

- When the bottom iscooked, flip to cook the other side. Keep the heat low to prevent burning. Onceboth sides are cooked, remove from the pan and set aside. This recipe makesabout 3 pancake Repeat the same steps with the remaining batter.

Make the Egg Pancakes
- Crack 1 egg into the pan, then place one pancake sheet on top. Gently press with a spatulaso the egg sticks to the pancake. Once the egg is cooked, flip the pancakeover.

- Add your favorite fillings — cheese, tuna, or ham all work great! Heat briefly to melt the cheese or warm the fillings.

- Roll the pancake intoa wrap, then slice into bite-sized pieces.

- Serve with your favorite dipping sauce such as soy sauce or ketchup. You can alsoenjoy it plain — the simple egg flavor is just as delicious!
