
Stir-Fried Vinegar Shredded Potatoes

Ingredients
- 1 large potato (Use a larger potato if cooking for more people. In this recipe, one large potato makes about one plate, serving 2–3 people.)
- 2 green onions, sliced
- 1 small chili pepper, sliced (Adds aroma and flavor without much heat)
- 2 tbsp cooking oil
- 1 tbsp white vinegar
- 1/2 tbsp soy sauce
- 1/4 tsp salt
Instructions
- Peel the potato and cut it into thin shreds. You can slice it thinly with a knife and then cut into shreds, or use a julienne slicer if you have one. Make sure the shreds are thin.

- Transfer the shredded potatoes to a mixing bowl and add water to rinse off the excess starch. Rinse twice, then drain well and set aside.

- Prepare the aromatics by cutting the green onions into small pieces and finely chopping the chili. Set aside.

- Heat a wok over high heat and add 2 tablespoons of oil. Once the oil is hot, add the green onions and chili, and stir-fry over high heat for about one minute until fragrant.

- Add the shredded potatoes and continue stir-frying over high heat. Add a small splash of water to help everything stir evenly.

- Add 1 tablespoon of white vinegar, 1/2 tablespoon of soy sauce, and 1/4 teaspoon of salt, stirring briefly after each addition. Once everything is evenly combined, remove from heat.
