
Palmiers
These Palmiers, also known as French Butterfly Pastries, are a light and crispy treat made with just puff pastry, sugar, and egg white. With their golden caramelized layers and delicate crunch, they’re perfect for tea time, casual gatherings, or holiday parties. Simple to make yet elegant to serve, these sweet pastries are a crowd-pleasing snack you’ll love sharing.
Ingredients
- 3 sheets puff pastry (about 13 × 14 cm each, store-bought for convenience)
- 1 egg white
- sugar, as needed (for sprinkling and coating)
Instructions
- First, prepare the sugar and egg white. Set aside the yolk —you can use it for another dessert, like egg tarts.

- Fold each puff pastry sheet in half, then open it back up. Lightly brush the surface with egg white and sprinkle a thin layer of sugar.

- Fold the top and bottom edges inward to meet the center crease, then fold again to form a thick strip. Repeat with the remaining sheets of puff pastry.

- Cut the folded pastry lengthwise into strips, about 1.5 cm wide.

- Line a baking tray with parchment paper. Dip both sides of each strip lightly in sugar, then place them upright on the tray.

- Leave some space between each piece—they will puff up while baking. If your tray is small, bake in two batches. Bake at 180°C (356°F) for 20 minutes.

- Once baked, the Palmiers are ready! Remove them from the oven and transfer to a plate.

Cooking & Storage Tips
- For best results, make sure your puff pastry stays cold while folding and cutting. If it gets too soft, place it in the fridge for a few minutes before continuing.
- When sprinkling sugar on the puff pastry, don’t use too much. You’ll coat the surface again later, and excess sugar can make the Palmiers overly sweet or cause them to burn while baking.
- Place Palmiers with enough space between each piece on the tray. They expand as they bake and will stick together if too close.
- If you don’t finish them right away, store them in an airtight container and enjoy within 3 days. Keep them in a cool, dry place —avoid heat and humidity to maintain crispiness.
