Heart-Shaped Jam Puff Pastries
These Love Letter Jam Puff Pastries are inspired by the look of a sealed envelope, complete with a heart-shaped center. Made with just a few ingredients, this easy dessert is crisp on the outside and sweet inside. Whether you’re baking for Valentine’s Day or simply surprising someone you love, this pastry makes a thoughtful and delicious treat.
Ingredients
- 1 square puff pastry sheets (cut into 4 rectangles)
- Jam of your choice (Fig jam used in this recipe; strawberry or any preferred jam works well.)
- 1 egg (for egg wash)
Instructions
- Prepare the Pastry – Start with two 14x14cm puff pastry squares. Fold each square in half and cut along the fold to create four equal rectangles.

- Create the Heart Cutout – Take one rectangle and fold it in half again to form two smaller squares. Use a heart-shaped cookie cutter to cut out the center of one square.

- Add the Jam & Fold – On the other half of the rectangle (without the cutout), spread about 10g of jam in the center. Carefully fold the heart-cutout side over the jam. The jam will peek through the hole, creating a beautiful red heart!

- Seal and Score – Use a fork to press down the three open edges to seal the pastry tightly. Then, use a knife to lightly score two lines on the top (be careful not to cut all the way through). Repeat these steps for the remaining three rectangles.

- Brush and Bake – Brush the surface of each pastry with egg wash for a golden finish. Place them in a preheated oven at 200°C (392°F) and bake for 12 minutes.

- Serve and Enjoy- Once baked, the pastries will be golden and flaky with a beautiful heart-shaped center. Share this simple, love-filled treat with someone special.

Cooking & Storage Tips
- Pastry Flexibility: You can use any puff pastry you have on hand. Feel free to adjust the dimensions, though rectangles are generally the easiest to fold and shape.
- Jam Variations: While we used fig jam, strawberry or raspberry jams are also excellent choices for a classic red heart look. Thicker jams usually stay in place better during baking.
- Seal it Tight: Make sure to press the edges firmly with a fork. A good seal prevents the jam from leaking out as the pastry puffs up in the oven.
- The Golden Glow: Don’t skip the egg wash! It’s the secret to achieving that professional, bakery-style golden brown crust.
- Keep it Cool: Puff pastry is easiest to handle when it’s cold. If the pastry gets too soft while you’re working, pop it in the fridge for 5-10 minutes before baking to ensure maximum flakiness. which can make the drink taste slightly astringent.
