Ingredients
- 40 g egg white
- 40 g Cake flour
- 40 g unsalted butter, melted
- 40 g granulated sugar
- 1/2 tsp vanilla extract
- 1/8 tsp salt
Instructions
- Make sure the butter is fully softened, then beat it until smooth.

- Add half of the sugar (about 20 g) and mix well. Add the remaining sugar and continue mixing. Mixing the sugar in batches makes it easier to combine evenly.

- Add 1/8 tsp salt and 1/2 tsp vanilla extract, then mix until well combined.

- Add 40 g egg white and mix until smooth.

- Add 40 g cake flour and mix until fully incorporated. The cookie batter is now ready

- Prepare a piping bag fitted with a piping tip. If you don’t have one, a small zip-top plastic bag works as a substitute. Transfer the batter into the bag.

- Pipe the batter onto a lined baking tray, forming strips about 5 cm (2 inches) long. Leave space between each strip, as the batter will spread during baking and this helps prevent sticking.

- Bake in a preheated oven at 170°C (340°F) for about 8 minutes. Since every oven is different, keep an eye on the cookies to avoid over-browning.
- Once baked, immediately transfer the cookies to a cooling rack. Lay them flat and avoid overlapping as they cool.

- After cooling, the golden and crispy Langue de Chat cookies are ready to enjoy.
