- 20 g brown sugar
- 1 large egg (about 60 g)
- 3 g baking soda
- 60 g rolled oats
- 100 g dried fruit (raisins used in thisrecipe; other dried fruits work too)
- 100 g cake flour (or low-protein flour)
Instructions
- Make sure the butter is softened, then beat it until smooth.

- Add 20 g granulated sugar and 20 g brown sugar, and mix well with the butter until fully combined.

- Add 1 egg and mix again until smooth and well incorporated.

- In a separate bowl, combine 60 g oats and 100 g dried fruit, then add the mixture to the batter.

- Add 3 g baking soda, followed by 100 g cake flour, and mix until all ingredients are evenly combined.

- Prepare a sheet of plastic wrap. Place the dough on it and roll into a log shape, wrapping it tightly. Refrigerate for about 20 minutes.

- Once chilled, unwrap the dough and slice it evenly into about 12 portions, approximately 20 g each.

- Gently flatten each portion into a round shape and place on a baking tray, leaving a little space between each cookie.

- Bake in a preheated oven at 170°C (338°F) for 14 minutes.
