Ingredients

  • 340 g corn kernels (You can use fresh, canned, or frozen corn)
  • 40 g Cornstarch
  • 40 g flour (all-purpose/cake/bread flour all work)
  • 70 g milk
  • 1 tsp parsley
  • 1 tsp salt
  • 1 tbsp sugar
  • unsalted Butter (for pan-frying)
  • Shredded Cheese (to taste)

Instructions

  • Prepare the Corn
    Start by pouring the corn kernels into a mixing bowl. If using canned corn, make sure to drain any excess liquid thoroughly to ensure the batter isn't too watery.

  • Combine Dry and Wet Ingredients
    Add 60g of all-purpose flour, 40g of cornmeal, 1 tsp of salt, 1 tbsp of sugar, and 1 tbsp of dried parsley into the bowl. Pour in 70g of milk.

    Stir all the ingredients until well combined. The batter should be thick enough to hold the corn kernels together.

  • Heat the Pan
    Place a non-stick frying pan over medium heat. Add a knob of butter (approx. 20g) and allow it to melt and coat the bottom of the pan evenly.

    Scoop a large ladleful of batter (approximately 80g) and place it into the pan, flattening it slightly with a spatula. You can fry about three small fritters at a time. Fry for about 2 minutes over medium heat.

    After 2 minutes, flip the fritters over. Immediately sprinkle a generous amount of shredded cheese on top of each fritter. Continue to fry for another 2 minutes.

    Once both sides are golden brown and crispy, and the cheese has melted beautifully, remove the fritters from the pan.
