Ingredients
- 340 g corn kernels (You can use fresh, canned, or frozen corn)
- 40 g Cornstarch
- 40 g flour (all-purpose/cake/bread flour all work)
- 70 g milk
- 1 tsp parsley
- 1 tsp salt
- 1 tbsp sugar
- unsalted Butter (for pan-frying)
- Shredded Cheese (to taste)
Instructions
- Prepare the CornStart by pouring the corn kernels into a mixing bowl. If using canned corn, make sure to drain any excess liquid thoroughly to ensure the batter isn't too watery.

- Combine Dry and Wet IngredientsAdd 60g of all-purpose flour, 40g of cornmeal, 1 tsp of salt, 1 tbsp of sugar, and 1 tbsp of dried parsley into the bowl. Pour in 70g of milk.

- Mix the BatterStir all the ingredients until well combined. The batter should be thick enough to hold the corn kernels together.

- Heat the PanPlace a non-stick frying pan over medium heat. Add a knob of butter (approx. 20g) and allow it to melt and coat the bottom of the pan evenly.

- Portion and FryScoop a large ladleful of batter (approximately 80g) and place it into the pan, flattening it slightly with a spatula. You can fry about three small fritters at a time. Fry for about 2 minutes over medium heat.

- Flip and Add CheeseAfter 2 minutes, flip the fritters over. Immediately sprinkle a generous amount of shredded cheese on top of each fritter. Continue to fry for another 2 minutes.

- Cook Until Golden BrownOnce both sides are golden brown and crispy, and the cheese has melted beautifully, remove the fritters from the pan.
