Air Fryer Honey Soy Chicken with Vegetables

30

This Air Fryer Honey Soy Chicken with Vegetables is a simple, flavorful homemade dinner featuring boneless chicken thighs, honey, soy sauce, and easy air-fried vegetables. The chicken is lightly marinated in a sweet-and-savory honey-soy sauce, then cooked in the air fryer with zucchini, king oyster mushrooms, and baby corn for a quick, complete, and satisfying meal.

I recommend using boneless chicken thighs because they stay juicy and tender in the air fryer. Chicken breast can also be used, but the cooking time may need to be shorter to avoid drying it out. The vegetables cook underneath the chicken and absorb some of the honey soy flavor, making this a practical one-basket air fryer dinner for busy days.

This recipe is great for a quick weeknight dinner, a simple lunch, or anyone looking for an easy air fryer chicken recipe with vegetables.

Cooking & Storage Tips

  • You can easily substitute chicken thighs with chicken breast if preferred. However, because chicken breast is much leaner, keep a close eye on the cooking time to prevent it from drying out. You may want to reduce the total air frying time to 15–16 minutes depending on the thickness.
  • Flipping the chicken is essential for even browning and ensuring it’s cooked through. If you are worried about forgetting the midway flip, simply set your air fryer timer for 10 minutes first. Once it beeps, flip the chicken and set it for the remaining 8 minutes!
  • Make sure to pat the chicken completely dry before marinating. If there is too much excess water, the chicken will steam inside the air fryer instead of getting that beautiful, honey-glazed caramelization on the edges.
  • Try to chop the zucchinis and king oyster mushrooms to a similar thickness as the chicken pieces. This prevents the vegetables from overcooking and becoming mushy before the chicken is fully done, keeping them beautifully juicy and crisp.
